Oreo Surprise Cupcakes

These are perfect cupcakes to make with the little ones or even to make as gifts because of the little surprise at the bottom! 

Ingredients

Cakes:
  • 12 whole Oreos
  • 8 roughly chopped Oreos, save around 1tbsp of the crumbs until the end
  • 12 mini Oreos
  • 115g unsalted butter, softened 
  • 115g caster sugar 
  • 2 eggs, beaten
  • 115g plain flour
  • 1/2tsp vanilla extract
  • 2tbsp milk 
Buttercream:
  • 125g unsalted butter, softened
  • 400g icing sugar
  • 1/2tsp vanilla extract
  • 1tbsp milk
Method
  1. Preheat your oven to 180C/160C fan.
  2. Line a 12-hole muffin tin with paper cases. 
  3. Using an electric or hand whisk, beat together your butter and sugar until fluffy and then add in the eggs and beat again until the mixture is completely smooth; adding a dash of the flour to prevent the mixture from curdling.
  4. Now add the rest of the flour and mix until fully combined. Add the vanilla extract and the milk and mix again. 
  5. Pour in the chopped Oreos and gently fold through them through the mixture. 
  6. Using two teaspoons, spoon equal amounts of the mixture into the prepared cases until there is no mixture left. 
  7. Bake in the oven for 20 minutes or until a skewer instead comes out clean. 
  8. Whilst the cakes bake, make your buttercream. 
  9. Place the butter into a bowl and then sieve the icing sugar into the same bowl. Using either a hand or electric whisk, beat them together until smooth. Add in both the vanilla extract and the milk and beat again until it's smooth and forms stiff peaks. 
  10. When the cupcakes have finished baking, leave them to cool on a wire rack for about 15 minutes.
  11. Using a star nozzle in a piping bag, pipe small splodges of the buttercream onto the top of each cupcake, top with a mini Oreo and finish with a sprinkle of Oreo crumbs. 
  12. Make a cuppa, kick your legs up and enjoy this little moment of joy.
