Twix Rocky-Road


I've heard a lot of debate as to whether chocolate belongs in the fridge or not and in my opinion, it all depends on the chocolate! Anything containing caramel is a yes in my opinion; meaning the Twix is a prime example of fridge chocolate! 


Containing both white AND milk chocolate Twix, this Rocky Road is a great treat to have in the fridge!


Ingredients

For the Rocky Road:
  • 200g golden syrup
  • 125g unsalted butter
  • 250g milk chocolate, broken into pieces 
  • 250g dark chocolate, broken into pieces
  • 200g Original Twix
  • 200g White Twix
  • 130g mini marshmallows 
  • 200g shortbread biscuits (not the fingers)
  • 100g raisins or glace cherries (optional)
Decoration:
  • 1 tin of caramel (I used Nestle)
  • 1 milk and 1 white chocolate Twix, cut into pieces

Equipment
  • 20 x 20cm baking tin
Method
  1. Line the baking tin with greaseproof paper and put to the side for now. 
  2. Chop up both the Twix and the shortbread biscuits into bitesize pieces (saving a few pieces of Twix to the side) and add to a bowl with the marshmallows and the raisins/glace cherries (if you're using them). 
  3. In a saucepan, add the golden syrup and butter. Melt on a medium heat until the butter has melted; mixing as you go to prevent anything from sticking to the bottom of the pan.
  4. Take the pan off the heat and add both the milk and dark chocolate. Stir until the chocolate is fully melted and incorporated. 
  5. Leave the mixture to cool for about 5 minutes and then pour into the bowl containing the chopped up Twix. Fold until everything is well coated. Pour into the prepared tin and smooth out with your spoon/spatula. 
  6. Sprinkle over the pieces of Twix you saved previously and then melt down the tin of caramel and drizzle over the top of the Rocky Road using a spoon.
  7. Leave to set in the fridge for a minimum of 3-4 hours but ideally overnight!   
  8. Make a cuppa, kick your legs up and enjoy this little moment of joy.
