Chocolate Orange Millionaires Shortbread

 

One of the most popular flavours in the current food market is chocolate orange and of course we all know that geezer Terry makes the best orange flavoured chocolate in the business! 


This millionaires shortbread is packed with the stuff along with a nice thick layer of caramel and shortbread underneath!  


Ingredients

Shortbread Ingredients:
  • 200g unsalted butter, softened
  • 100g caster sugar 
  • 275g plain flour 
  • zest of 2 oranges 
Caramel:
  • 200g unsalted butter 
  • 50g caster sugar
  • 65g golden syrup
  • 397g tin of condensed milk
Chocolate Orange Topping: 
  • 300g Terry's chocolate orange
  • 75g white chocolate 
  • Orange food colouring 
  • bag of mini chocolate orange segments 
Equipment
  • 20 x 20cm baking tin

Method
  1. Line the baking tin with greaseproof paper and put to the side for now. Preheat your oven to 180C/160C/Gas Mark 4.
  2. Cream together the sugar and the butter in a bowl before mixing in the flour and orange zest. It will look relatively dry but don't worry about this! 
  3. Pour this mixture into the prepared baking tin before pressing down firmly. Place in the preheated oven for 20-25 mins or until the top is golden brown. 
  4. Once baked, leave to the side to cool. In a large saucepan, pour the condensed milk, butter, sugar and golden syrup before melting on a medium heat until the sugar has dissolved. Make sure to keep stirring to prevent the mixture from burning on the bottom. 
  5. Once the sugar has dissolved, turn the heat up high until the mixture begins to boil. Boil it for 5-7 mins, making sure to stir continuously! 
  6. The caramel will be ready once it has changed to a slightly darker golden colour and has thickened slightly. 
  7. Pour this caramel onto the shortbread base before placing into the fridge to set for a minimum of 2 hours.
  8. When the caramel has finished setting, melt down the chocolate orange and then pour this all over the caramel layer, ensuring all corners of the tin are filled. Melt down the white chocolate, mix in a few drops of the orange food colouring and then drizzle this over the top. Press in a few segments of the mini chocolate oranges and then place the entire thing in the fridge to set overnight. 
  9. Once set, cut into however pieces you'd like! 
  10. Make a cuppa, kick your legs up and enjoy this little moment of joy.
